I love raw desserts and treats. They’re so easy and you can make absolutely any flavor of your favorite dessert, but with all whole, healthy ingredients. Whenever I hear people say they miss a certain food or treat, I love testing myself to see if I can recreate it. I recently heard someone say they missed salted caramels..so I give you my raw caramel slice with a chocolate base. Feel free to use different nuts, oats, or coconut to suit your needs or use either the filling or base for other recipes.
Ingredients:
Base:
- ½ cup almonds, sprouted*
- ½ cup cashews, sprouted*
- 3 tbsp cacao
- 10 dates
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- Optional: additional supplements (matcha, maca, bee pollen, etc.), berries, cucumber, etc.
Filling:
- ¾ cup dates (soaked, if needed)
- ¾ cup almonds, sprouted*
- ¼ cup shredded coconut
- 2 tbsp coconut cream or full fat coconut milk
- 1-2 tbsp maple syrup
- Pink salt, to taste
Other Items:
- Food Processor
- Square pan
- Parchment paper
Directions:
- Add all ingredients to your blender until creamy, adjusting ratios to desired taste and texture.
Notes:
- I always try to use sprouted nuts to remove the outer layer of enzyme inhibitors and improve digestion and mineral absorption. I usually soak nuts or legumes for 8-12 hours (or overnight) and dehydrate until dry.
